This morning we woke up at what we thought was 8:30 but was actually 9:30 due to daylight savings. We rushed to get ready and headed out to make the 10:00 class at the box. I am really glad we made it this morning because after class I decided to try for my bar muscle up since I had not in a while and I GOT IT!! Then I got it again! What a great day!!
After the gym, we stopped at the grocery store and got what we needed to prep for the week. This week we are having garlic marinated chicken on top of a bed of spinach with a lime vinaigrette and arrabbiata chicken with zoodles. The recipes are below.
Garlic Marinated Chicken
Olive Oil (Kasandrinos)
Trim and cut up desired amount of chicken breast and place in a bowl. We made about 9 lbs of chicken for the week to use for both meals. Add about 1/4 cup olive oil. (Our favorite brand is called Kasandrinos and can be purchased online. It is the only olive oil that I have found thats tastes like the olive oil that I had when I visited Greece.) Then add about 3 tbsp of minced garlic -- you can add more if you like garlic. I used the kind that is already minced for you and comes in the jar from the grocery store. Juice lemons or limes into the mixture. I used 2 for the 9 lbs of chicken. Then sprinkle some garlic salt on top. I did not measure but I dusted the top layer of the chicken in the bowl. I then mixed the chicken and let sit for about 2 hours.
Next cook the chicken in a skillet on medium heat until it is cooked the whole way through. I check the bigger pieces by cutting them in half to know when it is done.
To make our meals for the week, we just put a handful of spinach in the bottom of our tupperwear and weighed out the amount of chicken we needed for each meal. We keep the vinaigrette on the side and pour on the salad when ready to eat.
1/2 cup lime juice
1/2 cup apple cider vinegar
1 tbsp minced garlic
1/3 cup olive oil
Put all ingredients in a bowl and whisk together. We poured the vinaigrette into a dressing bottle and kept it in the fridge to use all week.

Rao's Homemade Arrabbiata Sauce
Since we already made the garlic chicken above it was really easy to prep for this meal. All we had to do was spiralize our zucchini using the spiralizer to make it into "noodles". Then I sautéed the zucchini noodles with a little bit of garlic salt on medium heat for about 5 minutes until they started to sweat and soften a little. We measured out our desired amount of zucchini noodles and garlic chicken into our containers for the week and then measured our Rao's Arrabbiata sauce on top. This meal really makes you feel like you are having a delicious pasta meal without the guilt of the actual pasta!
